Chickpeas, Spinach, Chilli & Feta Salad



Serves 4 - 6

You will need

  • Cooking oil for frying
  • Red chilli, deseeded, chopped - 1
  • Onion, chopped - 1 medium
  • Garlic, crushed - 2 t
  • Chickpeas, drained - 410g tin
  • Olive oil - 60ml
  • Apple cider vinegar - 60ml
  • Baby spinach, coarsely chopped - 100g
  • Coriander, fresh, chopped - 2 T
  • Parsley, chopped - 1 T
  • Feta cheese, crumbled - 100g
  • Spring onions, chopped - 2
  • Mint leaves, chopped - 2 T
  • Sundried tomatoes, chopped - 4halves
  • Salt to taste
  • Black pepper to taste

Method

  1. Fry onions, chilli and garlic in oil
  2. Soak tomatoes in luke warm water before chopping
  3. Add chickpeas, olive oil and apple cider vinegar – place in bowl to marinate 1hour
  4. Add remaining ingredients and marinate for 10min
  5. Serve
