Tasty Rice Dish
A quick one dish supper. Healthy and delicious.
You wlil need:
- 1½ Cups of Basmati rice
- 1 Onion
- 1 clove Garlic
- Spring onions
- Sweet peppers
- Choice of fresh herbs (Coriander works well)
- Squeeze of lemon
- Vegetable or other stock (1 cup should be enough)
Other suggested ingredients:
- Crushed Almonds (only add after cooked so they remain crunchy)
- Sun-dried tomatoes
- Bean Sprouts
- Cook Basmati rice
- Whlie the rice is cooking, start cutting all the vegetables finely etc. and prepare the stock in a cup.
- Carameze the onions, then add other cut vegetables according to cooking time (everything should remain crisp) along with the seasoning and lemon juice, then add the stock. Mix well.
- The rice should be almost cooked by now and can be drained.
